Company Background (for Business Directory): A’ Mare is an authentic Italian restaurant with a strong Apulian identity, located in Patong, Thailand. The project is the result of the experience and passion of Filippo, from Puglia, and Lisa, from Milan, who together have built an international entrepreneurial path in Italian hospitality and dining. Founders’ profile Filippo was born and raised in Puglia. As a child, he started working as a pizza maker to earn some pocket money, and through this early experience he discovered a deep passion for pizza-making and cooking. He then expanded his culinary knowledge through training with the Arma, gaining solid skills in discipline, organization, and kitchen techniques. After this formative period, he became the owner of the restaurant where he had been working in his hometown, thus starting his first entrepreneurial venture in the restaurant industry. Later, he moved to Australia, where he lived for more than ten years, working in reputable Italian kitchens. This experience allowed him to combine the roots of Apulian tradition with an international outlook, acquiring new skills and further refining his personal culinary style. Lisa was born and raised in Milan and has always had a strong entrepreneurial background. Although she did not initially work in the hospitality sector, she developed solid managerial, organizational, and commercial skills in other business fields. After meeting Filippo, combining her entrepreneurial experience with his culinary expertise, they decided to open their first restaurant together in Sydney, launching the “Bella Puglia” project, dedicated to promoting regional Apulian cuisine abroad. From Australia to Thailand: the creation of A’ Mare in Patong After their successful experience in Australia, Filippo and Lisa decided to move to Thailand, bringing with them the know-how acquired through years of work in Italian restaurants abroad. In Patong they founded A’ Mare, with the goal of offering a true point of reference for authentic Italian cuisine in an international tourist destination. A’ Mare offers traditional Italian cuisine, with a particular focus on dishes from the Apulian culinary tradition: fresh pasta, seafood preparations, and regional recipes, interpreted with balance and respect for their origins. Ingredients and Italian authenticity One of the key pillars of A’ Mare is the quality and traceability of raw materials. The ingredients used are almost exclusively Made in Italy, carefully selected in order to ensure: • the preservation of the authentic flavours of Italian cuisine; • respect for traditional recipes; • a dining experience as close as possible to what guests would enjoy in Italy. This choice represents a concrete commitment to safeguarding the Italian identity of the restaurant and is a distinctive element compared to the more generic “Italian cuisine” often found in tourist areas. Values, tradition, and hospitality Both Filippo and Lisa come from families that have worked in hospitality. This family tradition has passed on to them the true spirit of service: warm welcome, attention to detail, respect for guests and for the product. A’ Mare aims not only to be a restaurant, but also a place where guests can rediscover the atmosphere of Italian homes and trattorias: • an informal yet well cared-for environment; • a relaxed, family-like feeling; • the importance of time spent together at the table, alongside the quality of the food.
